Let the heathens drink herbicides, pesticides, and fertilizer. Chelsea wine shop owner Scott Pactor has dedicated two-thirds of his 2,000-bottle stock at Appellation Wine & Spirits to biodynamic and organic vino. In another unusual move, Pactor (formally a sommelier at Felidia and at Michael’s and assistant wine director at Balthazar) organizes his selection by flavor – light to full – rather than by geography. To further encourage the budding oenophile, he’s placed description cards in front of each bottle, offering a profile of the winemaker, flavor and aroma, as well as pairing and drinking suggestions. Moms and dads are welcome too: Crayons and coloring books are on hand to entertain little ones while you browse Mother Nature’s imbibable bounty.
